So who wants some taco pie this evening?  I'm here to say that this stuff is AMAZING and everyone needs to give this a shot.  Get the ingredients below!

Taco Pie

  • 1 lb ground beef
  • I package taco seasoning
  • I can refried beans
  • I can chopped greens chiles (this can be replaced with drained Rotel for a spicier flavor!)
  • Some jarred salsa
  • I package cornbread mix (6oz)-made according to package instructions
  • 1 cup grated sharp cheddar cheese

 Cook beef till browned, drain off fat.  In same skillet add taco seasoning and about 1/4 cup water to drained meat.  Stir till mixed.  Add chiles and some salsa, let cook till slightly dry, add beans and blend well. Spray a large pie pan with Pam, add prepared cornbread mix. Dollop taco mixture in the middle of the cornbread.  Top with cheese.  Bake at 350 till cornbread is nicely browned and cheese is melted.

Serve with more salsa and chips!
