Last Saturday at Trunnell's Farm Market, nine WBKR listeners came to compete for the title ROD-IRON CHEF AMERICA!  The challenge:  to create an original recipe using at least one farm-fresh ingredient available at Trunnell's.  We had a potato dish, Creole corn, a baked peach pancake, sloppy joes and cornbread, Janet's "Just Peachy" Cake and more!  Everything was DELICIOUS!!  Our judges had a difficult time choosing a winner, but did!  And the 2011 ROD-IRON CHEF AMERICA is Brenda Davis from Hartford, who, along with her friend, Sue Austin, cooked up some delicious Chutney Chicken Sandwiches!  And, there's good news for you guys!  She agreed to let us share the recipe . . .

CHUTNEY CHICKEN SANDWICHES:

Spread cream cheese and mango chutney (store bought or homemade) on two pieces of bread.

Layer fajita-style chicken on the bread.

Add lettuce, cucumber, tomato, red onion, red and green peppers.

Lightly spread butter on the brea and grill!

Cut the sandwich in half and serve with watermelon wedges.

Now, I must tell you.  Brenda and Sue brought enough sandwiches to feed the entire city of Livermore.  But, they were so tasty, the sandwiches were GONE by the end of the competition.  Brenda's CHUTNEY CHICKEN SANDWICH is truly one of the best sandwiches I have ever eaten.  And the watermelon was the perfect side item to serve with it.

For winning the Trunnell's Rod-Iron Chef America contest, Brenda won a $250 Trunnell's gift card and a grandstand box at our Taste of Country concert, Saturday, Sept. 10th at Ellis Park in Henderson.

Our other 8 contestants fared pretty well too!  They received gift cards from Trunnell's as well as two tickets each to the Grand Ole Opry!  And, stay tuned to WBKR.com!  We'll be sharing the other recipes from the contest with you in the coming weeks!
