It's a new feature (I hope) here at wbkr.com. It's called "Dinner with Dave." And today, to my pleasant surprise, I was greeted with the news that my first such meal would be homemade egg rolls, courtesy of our very own digital doyenne, Ashley Sollars. "Doyenne" means woman who makes homemade egg rolls...just kidding. It really means the oldest female of a group or family. And so that doesn't really apply either, but I like "digital doyenne" so I'm going to make it apply. Wow, I'm really off task. Anyway, Ashley made some delicious homemade egg rolls. Who knew there were people who made homemade egg rolls? Well, now I do. And here is Ashley's recipe:

Baked Homemade Eggrolls (30 minutes – includes baking
time)

1 lb of ground pork

2 cups of pre-shredded (bagged) coleslaw mix

Egg roll wraps

Olive oil

Preheat oven to 350*. Brown pork and when it’s just barely pink, add in coleslaw mix. Continue to brown until no longer pink and slaw mix is wilted. (Add salt and pepper to taste.) Assemble eggrolls as instructed by packaging directions. Place on cookie sheet and brush top and bottom with olive
oil. Bake at 350* for 10-15 minutes until brown. Serve with sweet and sour or hot mustard dipping sauce.

There you go. I had sweet and sour, by the way. But that hot mustard dipping sauce sounds awesome, too. Join me next time for "Dinner with Dave."
