I spent Sunday afternoon in the kitchen and I decided to share this recipe with you in today's What's Cookin'? segment on The CB Radio Show.  I love cake that's light and refreshing and that's exactly what this is.  Ladies and Gents, let the slobbering begin.  Here's the perfect cake for the end of Summer.  Key Lime Cake w/ Cream Cheese Frosting.  And, yes!  You're welcome.

KEY LIME CAKE

1 package Lemon Cake Mix (18.25 ounce)

1 package Jell-O brand lime mix (3 ounce)

1 1/3 cups vegetable oil

4 eggs

3/4 orange juice (I use pulp-free because I think pulp is nasty)

1/2 cup butter

1 package of cream cheese (8 ounce)

3 tablespoons fresh lime juice

4 cups confectioners' sugar

Directions:

Preheat oven to 350 degrees.  Grease/butter a cake pan.

CAKE: Combine cake mix, gelatin mix, oil, eggs and orange juice.  Bake according to the directions on the box of the cake mix.  You can use round pans if you want.  I was feeling lazy Sunday, so I baked mine in a 9x13.  When cake is finished, allow to cool completely.

FROSTING: In a large bowl, beat the butter and cream cheese until light and fluffy.  Add lime juice and confectioners' sugar.  Mix well.  **You may need to add a little more or a little less confectioner's sugar.  You'll know when the consistency is just right!
