OMG!!  This is literally one of the best things I have ever stuffed in my face and into my mouth.  Each Monday morning on The CB Radio Show, Brett and I feature a brand new recipe shared with us by one of the awesome ladies who've agreed to be a part of our What's Cookin'? segment.   And, this week, Val Holcomb is back in the studio showcasing recipe for Coconut Date Balls.  To say I had a PG-13 experience when I ate this is an understatement.  You're gonna LOVE these!

COCONUT DATE BALLS

1/2 cup butter

1 cup white sugar***

1 egg beaten

1 cup chopped dates (no sugar)

2 cups Rice Krispies

1/2 cup pecans, chopped

1/2 teaspoon vanilla extract

1/2 teaspoon almond extract

dash of salt

sugared, shredded coconut

Directions:

In a medium saucepan (non-stick) over medium heat, combine the eggs, butter, sugar and the dates.  Combine and stir (occasionally) for five minutes.  Remove from heat and cool for two minutes.

Add Rice Krispies, pecans, extracts and a dash of salt.  Mix to combine.

Butter your hands and roll the mixture into walnut sized balls.  By the way, Val says this is EXTREMELY sticky but so worth it!

Roll the balls in coconut, transfer to wax paper, repeat and serve!  And get ready for a PG-13 moment.  LOL!

***If you are using chopped, sugared dates, cut down the sugar to 3/4 cup.***
