Southwestern Quinoa Salad
1 cup quinoa, cooked
1 15 ounce can black beans, rinsed
1 fresh, medium-sized tomato, diced
1/2 cup chopped, fresh cilantro
1 tsp ground cumin
Garlic Powder or chopped fresh garlic, amount adjusted to taste
Six pepper blend seasoning, amount adjusted to taste
1 fresh lime, juiced
Cook quinoa according to package directions.  Drain and rinse black beans until water runs clear, Wash and diced fresh tomato.  Wash and chop fresh cilantro.  Mix ingredients together in a bowl.  Add cumin, garlic, pepper blend and lime juice.  Mix well.  Prepare at least 2 hours before serving to allow flavors to blend.  Refrigerate and serve chilled.
Variations include;  adding fresh corn, salsa, and peppers.  Whatever you add I'm sure it will be a success!
