Merritt Bates-Thomas is back for another edition of What's Cookin'? and she's serving up a hearty minestrone soup recipe that is ready in under an hour!

MINESTRONE SOUP

1 can tomato sauce
1 can diced tomatoes
1 can cut green beans, rinsed and drained
1 can tri-bean blend or kidney beans, rinsed and drained
2 - 3 carrots, peeled and sliced
1/2 Tbsp. olive oil
1 small yellow onion, diced
1/2 Tbsp. Italian seasoning
2 - 3 cloves garlic, pressed
1/2 pound ground beef
1/2 cup Ditalini pasta
Parmesan cheese for garnish
Basil or micro greens for garnish

Directions:

In soup or stock pot, mix canned ingredients together.   In a small skillet, over medium heat, add olive oil, then add carrots and onions and cook until onions are translucent.  Add to soup pot mix.  Add Italian seasoning and garlic.  Cook over medium heat, while browning ground beef in skillet.  Add ground beef to vegetable mix in soup pot.  Add pasta and cook for 30 minutes in covered soup pot for an additional 30 minutes.  Add garnishes as desired.  Soup’s on!  Enjoy!
