What’s Cookin’? Oven Roasted Butternut Squash [Recipe]
Merritt Bates-Thomas is back for another edition of What's Cookin'? and she's serving up a fall flavored recipe!
Oven Roasted Butternut Squash
2 - 3 cups spiralized butternut squash (produce section of the grocery)*
8 sage leaves, cut into small strips
2 cloves garlic
Olive oil
Preheat oven to 350 degrees F. Place butternut squash into a baking dish coated with olive oil. Cover and place in oven and cook for 30 minutes. While squash is cooking in the oven, saute' sage and garlic in a small amount of olive oil. Cook until garlic turns light brown and set aside. Remove squash from oven and top with sage and garlic mixture.
Enjoy!
Yield: 4 servings
*Cubed fresh butternut squash can be substituted in this recipe.
Cooking time will be increased.
