Illinois BBQ Spot Serves the State’s Best Brisket
There are quite a few barbecue restaurants in Illinois, but one definitely stands out for its brisket made from highly sought-after Wagyu beef.

I enjoy every aspect of barbecue, from the various cuts to the sides that go with them. However, the most coveted cut among most barbecue fans has got to be brisket. Food & Wine recently highlighted the best place to enjoy brisket in Illinois, and as it turns out, there is a reason it's been named the best in the state. While their cooking process and seasoning contribute greatly to the success of their product, the fact that it's harvested from Wagyu beef is likely what pushes this one ahead of the competition.
Why Is Wagyu Beef So Popular?
Before we reveal the restaurant in Illinois with the best brisket, let's talk about what separates Wagyu beef from its counterparts. According to the American Wagyu Association, Wagyu is a Japanese beef cattle breed derived from native Asian cattle. "Wagyu" refers to all Japanese beef cattle, where "Wa" means Japanese and "gyu" means cow. This breed of cattle contains more intra-muscular fat cells (marbling), which contribute to its unique taste and tenderness. Wagyu are naturally horned and can be either black or red in color.

Food & Wine notes that there is a lot of great barbecue in Illinois. However, the one that serves the best brisket is none other than BEAST Craft BBQ, located at 20 S Belt W, in Belleville. The restaurant is said to use Wagyu beef, which offers a delicious reminder that meat quality really matters. According to the restaurant's website, they say they are redefining "St. Louis style barbecue," claiming, "Kansas City and Memphis have nothing on us."
The popular barbecue joint was started in 2014 by St. Louis’ premier pit master, David Sandusky. He opened BEAST Craft BBQ Co. to help bring local barbecue traditions back to the forefront and reestablish the St. Louis area as a barbecue destination. While I've never personally been, it certainly looks good from the pictures, and it's definitely another one I'll have to add to my bucket list.
