Chad and I were just talking this morning about how much we are looking forward to cooler weather. This is the summer that just won't end, and we are over the heat and humidity. It's time for hoodies and crunchy leaves, and SOUP! STAT!

Yes, soup is one of the many reasons we are wishing for cooler temperatures. It's hard to get in the mood for chili or chicken noodle when it is one million degrees outside, but I am gonna crank my AC up and pretend this weekend. I have a new INCREDIBLE recipe to try thanks to our friend Patty Millay.

She joined us for our What's Cookin' segment this morning and served up a nearly identical "copycat" recipe for Dolly's Stampede soup. If you've ever been to the dinner & show in Pigeon Forge, you know they bring out the most delicious soup to start the meal.

Patty is a fellow Tennessee queen, so she has shared how to make your own Stampede soup at home. Here is what you need:

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 (32 oz) carton chicken stock
  • 2 (15 oz) cans mixed vegetables, drained
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • a pinch of red pepper flakes
  • a shake of parsley
  • 1 1/2 cups heavy cream

In a large, heavy-bottomed pot, melt the butter over medium heat. Once the butter has melted, add the flour and stir until the mixture is well combined. Cook for 1 minute, then slowly begin to add the stock while continuously stirring. Add mixed vegetables and seasonings, then simmer for 5 minutes. Mix in heavy cream and cook for 8-10 more minutes.

Patty said next time, she may add more veggies or even some shredded grilled chicken, maybe some fresh grated parmesan. Of course, you have to serve it with a hot and buttery biscuit on the side! This is an ultimate comfort soup, a hug in a bowl, a delicious way to remember Dolly.
