Suddenly, I am feeling like the Cookie Monster.  Over the weekend, Nashville Kat shared her recipe for Big and Chewy Molasses Spice Cookies and they look delicious.  I asked her if I could share it here at WBKR.com and she said, "Yes!"  Take a look.


Big and Chewy Molasses Spice Cookies
(Using melted butter make the cookies nice and chewy)
2 ¼ cups flour
2 teaspoons baking soda
½ teaspoon salt
½ teaspoon ground cloves
1 teaspoon ground cinnamon
1 1/2 teaspoons ground ginger
1 egg
¼ cup molasses
¾ cup butter, melted
1 cup brown sugar


Preheat oven to 350°. Mix dry ingredients together and set aside. Mix egg, molasses, butter and sugar together in a large bowl until smooth. Stir flour mixture in a little at a time; until well blended. Refrigerate dough for an hour then place balls of dough on a lightly greased baking sheet. Bake for about 12 minutes (I baked them quite a few minutes longer). Allow cookies to cool a bit before removing from pan.
