It has been a very long time since I grabbed a compartment tray and watched as a succession of lunch ladies loaded pizza, corn, and a roll onto it. Or maybe it was taco salad and green beans. Whatever the bizarre combination, it's been a minute.

I have no kids, but I know enough to know that days like the ones I described above are long since gone. There are still lunch ladies, of course, but I don't think the cafeteria procedures of 2025, in Kentucky or anywhere else, closely resemble those of...well, never mind.

I DO know that healthier offerings have become a more familiar sight on school cafeteria menu boards. Plus, today, lunchrooms look more and more like food courts at malls, with multiple options. Additionally, they're set up to create a more social atmosphere. (Although we were pretty social back in the day when we were trading our yeast rolls for extra taco salad.)

But let's get back to the future, shall we? No DeLoreans here, but there IS what I call "cafeteria technology" that really leans into the healthier eating game. In fact, I want them to start showing up in restaurants. We have touch-free car washes, and now there are touch-free salad bars.
