Today on the CB Radio Show Mary Higginbotham joined us for a little What's Cookin' and she brought a very simple and Kentucky Proud recipe.  Check it out... it's Easy Cheesy Eggplant.

So the name says it all.. it's EASY to make... it's CHEESY and it's an EGGPLANT.

Fix this puppy up!!

INGREDIENTS

3 cups cubed eggplant
2 medium tomatoes, sliced
1 large onion, sliced
1/4 cup melted butter
1/4 cup applesauce (you read that right... Delish)
1/2 teaspoon dried basil
1/4teaspoon garlic powder
8 ounces shredded mozzarella cheese
1/2 cup whole wheat bread crumbs
2 tablespoons grated Parmesan cheese

Mix the butter and applesauce and pour half of it over the vegetable mix.

Cover that baby up and bake it for 20 minutes at 450.  Once it is out of the oven top it with the Mozzarella, bread crumbs and Parmesan cheese along with the remaining butter and bake for an additional 10 minutes.
