Which Restaurant Should Take the Place of Tumbleweed in Owensboro?

If you could take the old Tumbleweed restaurant building in Owensboro and put in any restaurant of your choice, which would you choose?  I have a few ideas!

Okay, I have been giving this a lot of thought and I have made a list of my Top Five choices.  Now, I decided to go with chain restaurants because they're recognizable and popular and we can make strong cases for each!  Check 'em out!
