A popular culinary tradition here in the Commonwealth is Kentucky Benedictine. This new sandwich creation- Hill View Farms Meats' Kentucky Spring Sammie- is a real showcase for it.

Here's how to make a delicious sandwich recipe that features a delightful, cool, crisp and refreshing Benedictine spread.

KENTUCKY SPRING SAMMIE

2 thick cut slices of Hill View Farms sourdough bread

2 slices thick cut Hill View Farms sugar-cured bacon

4 Hill View Farms asparagus pieces

2 tablespoons prepared Mimi's Benedictine Spread

4 slices of Chevre goat cheese

2 slices of Hill View Farms tomato

Tablespoon of olive oil

Salt and pepper

DIRECTIONS:

1) Cook bacon to personal liking.

2) Heat olive oil in a skillet over medium high heat. Once hot, place asparagus in skillet and roll in oil. Sprinkle with salt and pepper.

3) Cook asparagus and move to brown asparagus roughly 4-5 minutes.

4) Preheat broiler.

5) Toast bread in toaster or in a lightly oil skillet.

6) Spread Mimi's Benedictine on toasted bread.

7) Place bacon pieces, then asparagus and top with goat cheese on prepared bread.

8) Place sandwich on an oven safe tray and place under broiler for 3 minutes.

9) Once removed from oven, place sliced tomatoes on top of the sandwich and sprinkle with salt and pepper to taste.
