Catherine Dowdy, of the UK Cooperative Extension Office in Daviess County, KY, has adapted a recipe from USDA's What's Cooking? Coincidentally, she shared that recipe on my morning show's weekly What's Cookin'? segment.
Here's how to make some delicious, low-cost Lettuce Wraps!

LETTUCE WRAPS

  •  1 pound ground beef
  •  3/4 cup shredded carrots
  •  8 ounces fresh white mushrooms, chopped
  •  1 (8 ounce) can water chestnuts, chopped and drained*
  •  3 green onions, chopped
  •  1 tablespoon garlic powder
  •  1/4 cup low sodium soy sauce
  •  1/4 teaspoon red pepper flakes
  •  1/4 teaspoon ginger
  •  1 teaspoon honey
  •  12 lettuce leaves

DIRECTIONS:

  1. Brown ground beef in a medium skillet over medium heat. Drain off fat.
  2. Add carrots, mushrooms, water chestnuts, green onions and garlic powder. Cook for another 2-3 minutes until beef is cooked and vegetables are tender.
  3. Add soy sauce, red pepper flakes, ginger and honey. Stir and continue to cook for 2 minutes.
  4. Spoon mixture on lettuce leaves to serve.

*Three stalks of chopped celery can be used instead of water chestnuts, if desired.*
