
This KY Mushroom Isn’t a Scrambled Egg, but It’s Just As Edible
If you happen to be walking in the woods and see a pile of "scrambled eggs" on a log, go take a look. Especially if you love to cook!
Scrambled Eggs on a Log?
I am in a really cool Facebook group of Kentucky folks who love to forage for edible mushrooms, weeds, plants, etc. and just last week, someone posted a really interesting find. They came across a huge mass of white, fluffy clumps about the size of a football. It looked exactly like scrambled eggs attached to a big tree that was floating on the edge of a lake near Louisville. I think it also looks like a handful of popcorn.
What is a Bear's Head Tooth Mushroom?
Bear's Head Tooth is an easily identified mushroom as are its relatives like Lion's Mane and Comb Tooth. They are all part of the Hericium abietis genus and are all, thankfully, edible. Some say they taste like crab or fish and can be prepared with a simple saute or even in a curry or pasta. A great option for folks who eat a meat-free diet or love a good mushroom dish.
What Are Some Benefits of Bear's Head Tooth?
This fungus is said to contain properties that promote brain health, gut health, good sleep, and a good mood boost. Even if it didn't do all of those things, it sure is good eating! Much better than scrambled eggs, some would say.
How to Cook Bear's Head Tooth
First, the most important thing is to make sure the mushroom is still fresh. If it has started turning yellow, it is not going to taste very good. If it is anywhere close to slimy, just leave it and look for another clump somewhere. The good thing about these mushrooms is that they are made to spread around. So there is a chance you'll find a fresher one close by.

As far as preparation, you can go as basic or creative as your tastebuds wish. Here is a video with what looks to be a tasty and easy way to cook Bear's Head Tooth. I'd maybe jazz up the pasta a little more, but you want to let the natural flavor of the mushroom shine through.
I've had fried Lion's Mane before and it was DELICIOUS, but I've never eaten this kind of mushroom. Have you ever found Bear's Head or eaten it before?
