This Winter Salad Adds a Little Florida to Your Kentucky Christmas Dinner
I don't know about you all, but this time of year is so busy that we "grab and go" food from restaurants way too much. Attending parties with delicious treats, baked goods, and cheesy dips which leave me craving greens, veggies, and fruit.
A Healthy & Delicious Holiday Side Dish
Holiday side favorites like stuffing, mashed potatoes, and mac and cheese, are the stars of the show. However, this Christmas salad is so bright and refreshing that it goes perfectly with your traditional Christmas dinner, or even to accompany a breakfast casserole on Christmas morning. Plus it is super fast and easy you won't miss out on any excitement of opening presents.

I even call her "The Queen of Vinaigrettes." Here is the simple, but oh-so-delicious recipe:
Merritt's Winter Salad with Orange Vinaigrette
Ingredients for Orange Vinaigrette
3 ounces olive oil
2 ounces fresh orange juice from 1 navel orange
1 ounce white balsamic vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
Ingredients for Winter Salad with Orange Vinaigrette
5 ounces arugula or other salad green of choice. Arugula is recommended as it adds a nice peppery taste.
1 honey crisp apple sliced 1/8 inch thick and cut into match sticks
3/4 cup walnut pieces, toasted
1 cup dried cranberries
6 ounces feta cheese, crumbled
The good thing about this salad is that it is customizable. Merritt suggested adding pomegranate or bacon if desired. You can get creative with the additions, but you'll want to make sure the dressing is the star of the show.
Combine all salad dressing ingredients in a mason jar. Whisk well with a fork, until emulsified. Add more lime juice to taste, if desired.
In a serving bowl, add your arugula and top with the remaining salad ingredients.
Drizzle with the salad dressing. Serve, and enjoy!
