I have a confession.  I have a bit of a Sunday morning ritual.  I get up early on Sundays and make pancakes for myself.  I. FREAKING. LOVE. THEM.  And I make them a variety of ways.  Sometimes I use chocolate chips.  More often than not, I make them with strawberries or blueberries or both.

If you like pancakes like I do, you're gonna love this morning's What's Cookin'? recipe from Kelly Bland of the UK Cooperative Extension Office.  She's sharing a Master Mix Pancake recipe that will save you money (you won't have to buy mixes from the grocery).  You can prep the mix and store it for up to six months.  It's quick, easy, convenient and remarkably cost-saving!

MASTER MIX PANCAKES

4 cups all-purpose flour

2 cups whole-wheat flour

2/3 cup sugar

2 tablespoons baking powder

1 tablespoon baking soda

DIRECTIONS:

In a mixing bowl, mix all ingredients until well blended.  In a cool, dry place, store mixture in an airtight container.  This can be stored up to six months.  Stir mixture each time before measuring.

PLAIN PANCAKES

1 egg

3/4 cup milk

1 teaspoon vanilla

1/4 teaspoon cinnamon

1 cup master mix

DIRECTIONS:

1) In a mixing bowl, combine egg, milk, vanilla and cinnamon.

2) Whisk in 1 cup of dry master mix.

3) Using a 1/3 measuring cup, pour batter onto a hot griddle or nonstick skillet lightly sprayed with nonstick cooking spray.

4) Flip pancakes when bubbles form on top.  Cook second side until golden brown.

Variation: Banana or Berry Pancakes

Add 1 medium, ripe, mashed banana or fold in 3/4 cup of fresh blueberries, strawberries or raspberries to the batter.

This recipe makes six 5-inch pancakes.  A serving is 2 pancakes.  The entire cost of the recipe is just $4.02 and the cost per serving is $1.34.
