Random fun fact!  It's National Mousse Day!!  Look, I don't know who comes up with these strange national holidays.  I mean, November 30th also happens to be National Meth Awareness Day, National Mississippi Day, National Mason Jar Day and National Stay Home Because You're Well Day.  Random, right?  But, I am actually living for the fact that there's one day out of the year where we're supposed to celebrate our love for mousse.  And I am going to do that by sharing a recipe for White Chocolate Mousse with Raspberry Sauce that's gonna make you want to slap your face with your own tongue.

I used to live in the Highlands in Louisville.  As a matter of fact, I lived in the heart of it- on Cherokee Road just a block removed from Bardstown Road, which is home to the Bristol Bar & Grille.  When I lived in that neighborhood, the Bristol was one of my favorite restaurants and, to this day, I will still pop in there occasionally for dinner and dessert.

Back then, one of my absolute favorite dessert items they served was, coincidentally, a mousse.  In fact, they're home to a magnificent White Chocolate Mousse with Raspberry Sauce.  The very first time I tried it at the Bristol, I fell in love.  Then, I immediately started looking online for a knock off recipe that would come close to it.  Luckily, years and years ago, I found one.

So, here goes.  Happy National Mousse Day!  You're gonna love this.

WHITE CHOCOLATE MOUSSE w/ RASPBERRY SAUCE

THE MOUSSE

4 ounces white chocolate (chopped, it will melt easier)

2 cups heavy cream

3 tablespoons powdered sugar

1 teaspoon vanilla

THE SAUCE

1 ½ cups fresh raspberries

3 tablespoons sugar

1 ½ teaspoons fresh lemon juice

THE GARNISH

fresh raspberries

white chocolate (shaved)

DIRECTIONS:

Okay, first let me say that this is REALLY easy!  The word "mousse" seems fancy, but it's incredibly easy to make.  And, you can even do a lot of this in the microwave, which makes it even easier and quicker.

First, microwave your four ounces of white chocolate and 1/4 cup of your heavy cream for about thirty seconds.  Like Patti LaBelle, you need to "Stir It Up!"  If the white chocolate isn't completely melted, you can heat for an additional twenty to thirty seconds.  Just stir until it's smooth and let it cool.

Take the remaining 1 3/4 cups of heavy cream and beat it with an electric mixer.  You want to do that until it foams like a rabid dog's mouth.  Then, add your powdered sugar and vanilla and beat until some peaks form.  Once you start to achieve those peaks, you're going to whisk about a cup of your whipped cream into the white chocolate.  Then, like Moira Rose and David in Schitt's Creek, your going to FOLD in the rest.  LOL!  You remember that scene, right?  #Hilarious

PRO TIP: Store your mousse in the fridge, covered.

Now, let's get sauced.  Well, so to speak.  Here's how you make your raspberry sauce.

In a small saucepan, combine 1 1/2 cups of your raspberries, the sugar, and lemon juice.  You'll want to heat that over low heat and, while you're doing it, smash your raspberries with a spoon like you're mad at them.  The goal here is to maximize the juice in them.  That said, be sure to pour everything through a mesh strainer.  Make sure you refrigerate your sauce too.

PRO TIP: You could easily use blueberries or strawberries in place of the raspberries.  Or use a combination of two or more.

Then, it's GO time.  Decide how much mousse you want.  And, trust me, you're going to want more than a dessert up.  Spoon it into whatever you're going to serve it in, then top it with your raspberry sauce and garnish it with fresh raspberries and shaved white chocolate.  Your mousse is going to look really fancy and taste mighty fine.

Though the recipe in the video is a tad different, I thought I would share this with you as well.  The recipe shared is quite similar to the one above and, more importantly, the visuals in the video show the process of creating White Chocolate Mousse with Raspberry Sauce in a user-friendly, step-by-step way.

I have made this dessert many times over the last twenty years or so and it absolutely never fails.  Each time I eat it, I am immediately transported back to the Bristol Bar & Grille on Bardstown Road in Louisville- enjoying an amazing dinner with friends in one of my all-time favorite spots in the Highlands.  It's a delicious ode to a former life and the sweet memories from it that I still carry with me.
