I was driving to Henderson several years ago on U.S. 60 when I noticed a bison in a field on the right side of the road. It wasn't close to the road, but I know a bison when I see one.

I also know they're no longer indigenous to Kentucky, although the paths they created in their travels gave way to some of our earliest roadways.

Bison in Kentucky

While they once roamed the Commonwealth (before Kentucky even was a Commonwealth), if you see them, you're probably looking at a farm that raises them. In Kentucky, for that particular photo op, you need look no further than the town of Goshen and Woodland Farm.

Woodland Farm

Woodland Farm is in Goshen, Kentucky, up in Oldham County. And, yes, those bison are raised as a food source. A pricey food source, but a food source.

Louisvillians Laura Lee Brown and Steve Wilson purchased the farm in 1996 with "heritage foods" and sustainable growing practices as the goal. You might say they were "farm to table" when "farm to table" wasn't cool.

But bison are only part of the story. Woodland Farm also raises heirloom vegetables, pork, fish, and beef, supplying many of those ingredients directly to Louisville's Proof on Main. We're talking heirloom veggies, steaks, fish, and pork. If you're hoping to try bison, Proof on Main even serves a bison burger made with meat from the farm.

Bison burgers have incredible flavor, and the meat is lean and healthy. When I was out in South Dakota and Wyoming back in 2011, bison burgers were being served up in nearly every restaurant I visited. And I was there for it.

I need to visit Proof on Main; it's been since that trip 15 years ago that I've had bison. And I am ALWAYS down for farm-to-table.
