It's peach season here in Kentucky and the UK Cooperative Extension Service is celebrating with a delicious recipe that combines peaches with pork chops.

Catherine Dowdy, with the Daviess County Extension Office, joined our radio show to share it. Here's how you make Skillet Pork Chops with Peaches. I can tell you (because I tasted it and devoured my entire serving) that it's absolutely delicious.

SKILLET PORK CHOPS w/ PEACHES

1 tablespoon oil

4 center cut pork chops (trim off the visible fat)

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1 tablespoon butter

2 cups diced canned peaches, drained

2 tablespoons apple cider vinegar

2 tablespoons sugar

DIRECTIONS:

1) If using fresh peaches (which Catherine did), wash under cool running water, gently rubbing the skin. Dry then dice.

2) Heat a large skillet over medium-high heat. Add oil.

3) Season pork chops with garlic powder, salt and black pepper. Add to pan.

4) Brown both sides of pork chops, cooking the meat until it reaches an internal temperature of 145 degrees F. Remove from pan to rest.

5) Return skillet to the stove and increase heat to high. Add butter, peaches, apple cider vinegar and sugar. Cook quickly, stirring often, allowing peaches to slightly turn brown and sauce to thicken (about 2 to 4 minutes).

6) Return pork chops to the pan with peaches and continue cooking until the mixture coats the pork chops (about 2 to 3 minutes).

7) Serve each pork chop topped with peaches.

Of course, one of the great things about recipes developed by the UK Cooperative Extension Office is that they're designed to feed lots of mouths in a cost-effective, but incredibly healthy way. The estimated cost of this recipe is $7.78, which makes the cost per serving (it serves 4) just $1.98.

When Catherine prepared this, she made it for even less. She took advantage of a pork chop sale at Kroger where she got a package of six chops for just $6. That made the cost per serving just over $1 a piece.
