
The Best Peanut Butter Cookie Recipe You’ll Ever Try
June 12th is National Peanut Butter Cookie Day and I am celebrating by violating the trust of my family and sharing a recipe that dates back generations. You're welcome!
Okay, let me set the stage for you about just how legendary these peanut butter cookies are. About twenty years ago, three different coworkers were bragging about how good their peanut butter cookies are. In fact, there was an insane amount of smack talk going on in the office. So, to settle the debate, the three women decided to have a peanut butter cookie bake off. The parameters? Each would bake their cookies at home, bring them to work, plate them up for the office, and the staff would then taste test the cookies, rate them, and, ultimately, pick the winner.
Now, I had no skin in this game other than I knew my mom's cookies would blow theirs off the proverbial map. Yes! Mom's peanut butter cookies became the fourth entry in the contest. And guess what? As expected, it wasn't even close. Teresa, Gayda, and Traci weren't eating cookies. They were munching on crow. My mom Judy's cookies won in a virtual landslide. That day, I shared the goodness with the friends and coworkers.
Today, in honor of National Peanut Butter Cookie Day, I'm sharing the recipe with YOU! You should also know that my mother would prefer that we keep it under the protection of armed guards and snipers.

But here it is! A peanut butter cookie recipe that dates back to her grandmother. So, based on the current family tree, we know it's been in our family for at least six generations. It's so beloved, I even own a cutting board with the recipe laser-engraved into it.
Here's how to make 'em!
PEANUT BUTTER COOKIES
1 cup lard
1 cup brown sugar
1 cup white sugar
2 eggs
2 1/2 cups flour
1 1/2 cups peanut butter
1 teaspoon vanilla
1 teaspoon baking soda
DIRECTIONS:
Preheat oven to 325 degrees.
Mix all ingredients and roll into balls about the size of a walnut. Criss cross with a fork.
Don't bake too fast. Roughly 10-12 minutes.
