Hey Y'all, Angel here and it's National Junk Food Day!  I don't eat a lot of junk food but when I do I go totally overboard.  Today I wanted to share some fun 3-ingredient cookie recipes that will take less time to prepare so you have more time to enjoy them.

Strawberry is probably one of my favorite flavors of cookie.  I learned how to make these cake cookies from my friend Jessica, when I was director for Owensboro Parks & Rec Summer Day Camp.

2 eggs
1 box of Strawberry Cake Mix
1/3 cup of Canola/Vegetable/Coconut (whatever oil you want)

Mix together cake mix, oil and eggs.
Mix until batter is almost lump-free and ingredients are blended.
Shape dough into 1 inch balls or use a 1 inch cookie scoop.
Roll in powdered sugar.
Bake at 375 degrees for 8-10 minutes or just until centers are set.

2 ripe extremely ripe bananas
3/4 cup one-minute oatmeal
1/3 cup crunchy peanut butter
(additional coconut flakes or chocolate chips)

Preheat the oven to 350 degrees & line baking sheet if needed with parchment paper or use cooking spray.
Use a large bowl to mash up the bananas with a fork. Add the peanut butter, oatmeal, and chocolate chips to the mashed banana and mix.
Use a medium cookie scoop to measure heaping scoops of the cookie dough onto the prepared baking sheet. Use your fingers or palm to gently flatten the cookies.
Bake for 15 to 17 minutes, remove from oven and allow to cool completely before enjoying!

1 stick plus 2 tbsp. salted butter, softened
1/3 cup sugar
1 cup all-purpose flour
Sprinkles (optional)

Preheat the oven to 325*
With a hand mixer mix butter and sugar together until they are light and fluffy
Then add flour.
Roll into small 2-inch balls and place on baking sheet.
Flatten each cookie with a fork and add sprinkles if you want!
Bake for 14-16 minutes and then let cool.

I love when my niece Brandi brings these Haystacks to our holiday parties.

1 cup butterscotch chips
1/2 cup peanut butter (not the natural kind)
2 cups chow mein noodles (1 large container)

Melt chips and peanut butter in the microwave in a bowl.  Stirring every 15 seconds until melted.
Mix in the chow mein noodles, crushing them up a bit as you mix.
Scoop heeping spoonfuls onto waxed paper. Let cool. Keep in the refrigerator.

I have never made these next ones but I know my husband, Joe, would go crazy for them.

1 cup mini marshmallows
3 cups of Oreos chopped
4 cups white chocolate broken into pieces

Line a 9-inch square cake pan with  parchment paper.
In a large mixing bowl, add marshmallows & 2 & 1/2 cups chopped Oreo cookies.
Melt your white chocolate in the microwave, stirring every 20 seconds or so watch carefully.
Pour melted chocolate over your cookies and marshmallows stir really good.
Make sure it is all coated in white chocolate and dumb into cake dish.
Add extra Oreos on top.
Place in the fridge for at least 1 hour or until chocolate has set.
Cut into small squares to serve.
