What’s Cookin': Apple Nachos [Recipe]
Memorial Day is just around the corner and we're getting you ready this morning in our What's Cookin'? segment. Melissa Webb, from the UK Cooperative Extension Office, is sharing a recipe for Apple Nachos that will liven and sweeten up any picnic or backyard barbecue!
APPLE NACHOS
1/4 cup peanut butter
1/4 cup non-fat Greek yogurt
2 tablespoons milk
1 tablespoon honey
2 red apples, cored and cut into 1/4 inch slices
2 green apples, cored and cut into 1/4 inch slices
Directions:
1. In a blender, combine peanut butter, yogurt, milk and honey. Blend until smooth.
2. Place apple slices on a large plate or platter and drizzle with peanut butter sauce.
3. Add toppings of choice if desired and serve immediately.
Optional toppings: coconut, dried cranberries, granola, peanut butter chips, chocolate chips, pecan pieces, raisins
Note: Brush the surface of the apples with lemon juice to prevent browning.
