Merritt Bates-Thomas is back for another edition of What's Cookin'? and she has a delish casserole dish!

Salmon Broccoli Casserole

6 oz dry pasta (any variety or shape)

5 fresh mushrooms, sliced and halved

2 - 5 oz. packets of salmon (skinless and boneless)

1 - 12 oz. package frozen chopped broccoli

1 can condense heart-healthy cream of mushroom soup

1 cup shredded cheddar cheese

 Prepare pasta according to package directions.  Drain and rinse when finished cooking.  Wash and slice mushrooms and then saute in a small amount of olive oil for 3 - 5 minutes.  In a mixing bowl add all ingredients and stir together well.  Pour into an 8 X 8 baking dish coated with a small amount of olive oil. Cook in an oven preheated to 350 degrees F for about 30 minutes.
