I love Italian food and one my all-time favorite dishes is Chicken Parmesan. Jim Gilles, with Hill View Farms Meats in Kentucky, has created a sandwich version of that classic dish that will make your head spin. Here's how to make it!

CHICKEN PARMESAN SANDWICHES

2 packages of Hill View Farms chicken breast

2 bottles of Miss Marie’s Spaghetti Sauce

1 bag shredded Country View Creamery Mozzarella

2 eggs whisked

1 cup Cortana parmesan cheese divided

1 cup panko bread crumbs

3 tablespoons olive oil

1 teaspoon Hill View Farms Italian seasoning

1 teaspoon Hill View Farms rosemary, basil & thyme seasoning

1 teaspoon Hill View Farms sweet basil & oregano seasoning

1 teaspoon garlic powder

DIRECTIONS

1. Preheat oven to 450 degrees.

2. Butterfly your chicken breasts in half.

3. Place eggs and Panko bread crumbs into two shallow bowls. Season chicken with salt and pepper.

4. Combine half of Parmesan cheese, Panko bread crumbs, Italian seasoning, rosemary, basil & thyme seasoning, sweet basil & oregano seasoning, garlic powder.

5. Dip chicken in egg wash, then coat both sides of breast in Panko mixture.

6. Heat oil in skillet over medium heat.

7. Fry chicken breasts for 2 minutes on each side.

8. In a 9x13 inch baking dish pour a thin layer of Miss Marie's Spaghetti Sauce into the bottom. Place browned chicken onto a layer of sauce.

9. Top chicken with another layer of spaghetti sauce, remaining Parmesan cheese and mozzarella cheese.

10. Bake for 10-15 minutes until cheese is golden brown and sauce is bubbling.

11. Slice and toast sourdough bread.

12. Spread with butter or garlic butter.

13. Place cooked chicken on slice of bread top with a little more sauce, micro greens, and pesto aioli. Place another slice of toast on top.
