It's strawberry season here in the tristate and we're celebrating with an incredible strawberry salad recipe from Merritt Bates-Thomas, who is a Registered Dietician with the Green River District Health Department.  Each month, Merritt shares a What's Cookin'? recipe with us and you can always count on two things- it's going to be healthy and delicious.

As an FYI, according to the website PickYourOwn.org and their Harvest Calendar, the best strawberry picking time here in Kentucky is May through June!  So, pick yourself some strawberries (or pick them up at a local grocery or farm store) and try making this delicious and healthy salad at home. We're calling it the Strawberry Fields Salad!

Merritt brought a serving of this to the radio show and I ate it.  Quickly!  It was naturally sweet and delicious and the combination of strawberries and goat cheese was incredible.

Here's how to make it!

STRAWBERRY FIELDS SALAD

The Salad

4 oz. Spring Mix salad greens (spinach, bibb lettuce, or lettuce wedges can be substituted)
2 cups fresh strawberries, stemmed and quartered or sliced
1/4 cup pine nuts (1/2 cup pecan halves can be substituted)
4 oz. crumbled goat cheese (crumbled Bleu cheese can be substituted)

Strawberry Basil Vinaigrette Dressing

2 1/2 cups fresh strawberries, stemmed and cut in half
3 tablespoons red-wine vinegar
2 tablespoons olive oil
1 tablespoon honey
1 tablespoon finely chopped fresh basil or basil paste
