Have you ever had a caprese salad? Okay. Fair. It's possible you may not know what that is.

If not, here's a simple explanation/recipe I found on YouTube.

Now, I must tell you. I am a HUGE fan of caprese salads. I love the combination of tomato and cheese. That's precisely why I relish any opportunity I get to enjoy this dish. Jim Gilles, from Hill View Farms Meats in Owensboro, just created a caprese-inspired recipe that takes the basic ingredients of the popular salad, adds some chicken, and bakes it all up.

Here's how to make it!

BAKED CAPRESE CHICKEN

4 Hill View Farms boneless, skinless chicken breasts

2 tablespoons extra virgin olive oil

1 teaspoon freshly ground black pepper

2 teaspoons salt, divided

2 cloves garlic, minced

2 tablespoons balsamic vinegar

1 tablespoon light brown sugar

2 teaspoons Kinder's Buttered Onion seasoning

2 cups Cecil Farms cherry tomatoes

1 8oz block of Country View Creamery mozzarella, cut into slices

Fresh basil leaves

DIRECTIONS

1. Preheat oven to 425-degree Fahrenheit.

2. In a large oven-safe skillet, heat oil over medium-high heat.

3. Season chicken breasts evenly with 1 teaspoon each salt and pepper and Kinder's Buttered Onion. Sear in skillet for about 4 minutes.

4. In a bowl, stir garlic, balsamic vinegar, brown sugar and 1 teaspoon salt until well combined. Add tomatoes and toss until evenly coated.

5. Flip chicken breasts and add balsamic-glazed tomatoes surrounding chicken in skillet.

6. Place skillet in oven and bake 20-24 minutes, or until chicken reaches an internal temperature of 165-degree Fahrenheit.

7. Remove skillet from oven and preheat broiler. Top each chicken breast with 1 slice of mozzarella. Return to oven and broil 2 minutes or until cheese has melted.

8. Remove from oven and spoon tomatoes and balsamic glaze over each chicken breast and garnish with basil leaves.
