Last year, during Owensboro Burger Week, Ritzy's competed for the grand prize with a burger inspired by Elvis Presley. "The Velvet Elvis' was a single Ritz burger topped with pepper jack cheese, thick cut bacon, and Ritzy's custom peanut butter spread made with creamy peanut butter, syrup, fresh bananas, and chopped peanuts.

Now, in this week's 'What's Cookin'?' segment, Owensboro's Patty Millay is serving up a dessert bar that's also inspired by The King!

This is a classic Elvis favorite with a surprise ingredient at the end!  These were so much fun to make and I only had to purchase 2 of the ingredients.  Most of this is household staples that you already have on hand.

Here's how to make 'em!

ELVIS BARS

1/2 cup of unsalted butter (softened)

1/2 cup creamy peanut butter

1/2 cup white granulated sugar

1/2 cup dark brown sugar

2 medium ripe bananas mashed (about 3/4 cup)

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1 cup semisweet chocolate chips

4 slices of cooked bacon (crumbled)

1/2 cup powdered sugar for garnish

DIRECTIONS:

Preheat your oven to 350*.  Grease a 9 inch square baking dish and line with parchment paper.  Combine the butter, peanut butter, white sugar, and brown sugar in the bowl of a heavy duty stand mixer. Patty says this will be very thick.  Beat on medium high speed until fluffy and well combined, roughly 3-5 minutes. Be sure to stop occasionally to scrape down the sides of the bowl as needed.

Add mashed bananas, egg and vanilla, beat on medium speed until well combined.  30 seconds to 1 minute.

Whisk together the flour baking powder, salt and cinnamon in a small bowl until combined.  Gradually combine the dry ingredients into the wet batter and beat on medium speed.  Gently fold in the bacon and chocolate chips.  Pour the batter into the prepared pan, smoothing with a spatula.

Bake at 350* until golden brown and a wooden pick inserted into the center comes out clean.  This will take about 30-35 minutes.  Place the dish on a cooling rack and allow to cool completely for about an hour. Then cut into squares.

Pro tip from Patty:  I dusted mine with powdered sugar just to up that sweetness factor!  You could use a powdered sugar glaze as well if you like!
