This recipe is a great new way to feature and enjoy asparagus. This Asparagus Tomato Salad, which is beautiful in taste and color, is the perfect side dish for any spring cookout, picnic or barbecue. Here's how to make it!

HOW TO MAKE ASPARAGUS TOMATO SALAD

ASPARAGUS TOMATO SALAD

1 pound of fresh asparagus, trimmed and cut into 1-inch pieces

1 small zucchini, halved and cut into 1/4-inch slices

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 garlic clove, minced

1/4 teaspoon seasoned salt

1/4 teaspoon honey mustard

1 cup cherry or grape tomatoes, halved

1/4 cup sliced green onions

1/4 cup shredded mozzarella cheese

1/4 cup minced fresh parsley

DIRECTIONS:

1) Place asparagus and zucchini in a steamer basket. Place in a saucepan over 1 inch of boiling water. Cover and steam for 2 minutes.

2) Rinse in cold water.

3) Whisk together olive oil, red win vinegar, garlic, seasoned salt and honey mustard.

4) Pour over asparagus mixture; toss to coat.

5) Toss in tomatoes and green onions.

6) Sprinkle with mozzarella cheese and parsley.

7) Serve and enjoy!

Jim says the total preparation time for the dish, from cutting up the vegetables to serving, is about 30 minutes.
