
Savor Summer With These Peach Chicken Skewers From Hill View Farms
If you're looking for something unique to make on the grill this summer, check this out. Jim Gilles, from Hill View Farms Meats in Owensboro, KY, has cooked up a recipe for Chicken Peach skewers. It's basically a combination of sweet and savory on a stick! #PeachyKeen
CHICKEN PEACH SKEWERS
6 wooden skewers soaked in water for 30 minutes.
2 lbs. Hill View Farms chicken boneless chicken breast cubed
Salt/Pepper
½ teaspoon Bourbon Barrel Smoked Chili Powder
2 tablespoons Olive Oil
4 Reid’s Orchard peaches, quartered then halved
4 Riney Farms Jalapenos halved, seeded, and cut into chunks
1 Cecil Farms Sweet Onion cut into chunks
½ cup Pops Peach Chutney
1 teaspoon Bourbon Barrel Smoked Soy Sauce
1 teaspoon Apple Cider Vinegar
1 teaspoon Dijon Mustard
1 teaspoon Minced Garlic
1/8 teaspoon Spicewalla red pepper flakes

DIRECTIONS:
1. Preheat grill over medium-high heat to 400 degrees Fahrenheit.
2. In a bowl, toss the chicken cubes with ½ teaspoon each of salt, pepper, chili powder and 1 tablespoon olive oil.
3. Alternate pieces of chicken, peach slices, jalapeno chunks and onions onto skewers. (You could also add cherry tomatoes if you'd like). The skewer should have about 4 pieces each of the 4 ingredients.
4. In a small bowl, whisk together the chutney, 1 tablespoon olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, ½ teaspoon salt & pepper, and red pepper flakes.
5. Grill skewers for 2-3 minutes per side, basting with the chutney glaze, until chicken is cooked through and caramelized.
6. Serve warm with remaining peach glaze on the side.
