CHICKEN PEACH SKEWERS

6 wooden skewers soaked in water for 30 minutes.

2 lbs. Hill View Farms chicken boneless chicken breast cubed

Salt/Pepper

½ teaspoon Bourbon Barrel Smoked Chili Powder

2 tablespoons Olive Oil

4 Reid’s Orchard peaches, quartered then halved

4 Riney Farms Jalapenos halved, seeded, and cut into chunks

1 Cecil Farms Sweet Onion cut into chunks

½ cup Pops Peach Chutney

1 teaspoon Bourbon Barrel Smoked Soy Sauce

1 teaspoon Apple Cider Vinegar

1 teaspoon Dijon Mustard

1 teaspoon Minced Garlic

1/8 teaspoon Spicewalla red pepper flakes

DIRECTIONS:

1. Preheat grill over medium-high heat to 400 degrees Fahrenheit.

2. In a bowl, toss the chicken cubes with ½ teaspoon each of salt, pepper, chili powder and 1 tablespoon olive oil.

3. Alternate pieces of chicken, peach slices, jalapeno chunks and onions onto skewers. (You could also add cherry tomatoes if you'd like). The skewer should have about 4 pieces each of the 4 ingredients.

4. In a small bowl, whisk together the chutney, 1 tablespoon olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, ½ teaspoon salt & pepper, and red pepper flakes.

5. Grill skewers for 2-3 minutes per side, basting with the chutney glaze, until chicken is cooked through and caramelized.

6. Serve warm with remaining peach glaze on the side.
