The dish, which features chicken, green beans, potatoes, butter and Italian seasoning is quick, easy and delicious. You literally arrange it all in a single casserole dish and bake it.

Well, Jim Gilles- from Hill View Farms Meats in Owensboro, KY- has created his own version of a One Pan Wonder. He has cooked up a Kentucky Proud Summer Skillet recipe. While Dorothy's dish goes in the oven, Jim's is cooked on the stove top. It's chock-full of summer veggies and features some of Hill View's 'taste the difference' locally raised ground chuck.

Here's how to make it!

SUMMER SKILLET

· 1 pound ground chuck

· 1 medium yellow onion chopped

· 1 small green pepper chopped

· 3 cloves of garlic minced

· 2 tsp chili powder

· ¾ tsp salt

· 1/3 tsp pepper

· 3 medium zucchini cubed

· 2 large tomatoes diced

· ¼ cup water

· 1 cup uncooked instant rice

· 1 cup shredded Colby jack cheese

DIRECTIONS

1. Cook ground beef with onion and pepper over medium-high heat 8 – 10 minutes or until beef is no longer pin. Drain.

2. In same skillet, stir in seasonings, vegetables, water and rice with the beef, pepper and onion mixture. Bring to a boil. Reduce heat, cover and simmer until rice is tender, about 10-15 minutes. Sprinkle with cheese, remove from heat, let stand until cheese has melted, then serve.
