Merritt Bates-Thomas, creator of The Kitchen Transition on Instagram and Facebook, has created a delicious end-of-summer recipe that you can enjoy as a snack, a side, or a main dish for breakfast, lunch, or dinner. And, it's unexpectedly minty fresh.

If you love watermelon and cucumber, you're going to want to make this. The good news? In addition to being light, crisp, fresh, and tasty, it's incredibly easy to make. In just minutes, you'll be able to enjoy these Watermelon Cucumber Skewers. Plus, it offers a couple of unexpected stars of the show- mint and feta cheese. And, if you don't want to mess with using skewers, you can easily prepare and enjoy this dish as a salad.

WATERMELON CUCUMBER SKEWERS w/ FETA & MINT

1 - 8 to 11 ounce block feta cheese

1 small seedless watermelon

1 English cucumber

1/4 cup mint leaves (for garnish)

Balsamic reduction

Miniature wood or bamboo skewers

DIRECTIONS:

1) Cut feta block into desired size depending on whether you are making a salad or threading ingredients onto a skewer.

2) Cut watermelon into desired size or use a melon baller.

3) Slice cucumber and cut into halves or quarters.

4) Cut or slice mint leaves into thin ribbons and mix 3/4 of it into watermelon, cucumber, feta mixture.

5) Reserve remainder for garnish before serving after drizzling with balsamic reduction.

6) Assemble skewers alternating watermelon, cucumber, and feta cheese. Garnish with balsamic reduction and mint and serve.
