 Roasted Cauliflower with Peas

1 head of cauliflower

olive oil

2 cloves of garlic, minced or garlic powder

Italian seasoning

Salt and pepper

1 cup frozen peas

Preheat oven to 375 degrees.  Remove leaves from the base of the cauliflower head.  Cut stem even with the bottom of the cauliflower head.  Drizzle olive oil in the center of an 11 x 7 baking dish.  Place cauliflower in the baking dish and drizzle olive oil over the top.  Rub olive oil over the entire cauliflower head.  Sprinkle with garlic, salt, pepper, and Italian seasoning.  Cook for 20 to 25 minutes until cauliflower is tender enough to easily cut apart with a chef's knife.  Arrange cauliflowerettes over the entire baking dish.  Return to oven for another 10 minutes.  While cauliflower is finishing in the oven, place 1 cup frozen peas in a microwave-safe bowl and cook for 2 minutes.  Remove cauliflower from oven and peas from the microwave.  Pour peas over the cauliflower and serve.
